Sphaghetti A la Dad Final copy

Saturday, to most people it means the weekend, no school, no work, and most of all time to relax; while these are exciting things about Saturday, the thing I look forward to the most is my Dad coming over to make food for my family. My Dad is a native born Italian and before my grandma died she left him a whole book of recipes that he loves to make for his family. One delicious recipe in particular is his Bologonese spaghetti. To make this tasty treat you would need 2 full carrots, half an onion, half a stalk of celery, 1/4th of a fresh garlic bulb, any kind of meat, 1 can of tomato sauce, a cup of heavy whipping cream, two packages of spaghetti, and most important, the olive oil.

When my Dad starts off this recipe he’ll dice all the vegetables, the carrots, the onion, the celery, and the garlic, and let them simmer in the olive oil for 20 minutes. This really brings out the flavor of the vegetables and gives it a good base for the tomato sauce and cream. Then, after twenty minutes or until the vegetables start to get slightly brown he will add the tomato sauce. At this point he'll start cooking the rest of the parts of the meal. First, he'll put a pot of water on to boil so he can cook the pasta. Then, he'll put another pan with an olive oil base. At this point it gets a little complicated because you have to watch three different things at once, but as my dad says, “ Non temere!” Meaning no worries, he keeps track of the times of the three pots on his watch, and doesn‘t leave his cooking area so there is no chance of the three different pans burning. First, with the pasta pot he just lets it boil then puts the pasta in for twenty minutes or until its soft enough to eat. Then, with the meat my Dad cooks it until its done (this is completely dependent on what kind of meat you are using pork, sausage, beef.... etc.) Lastly, for the sauce your going to let it cook for an hour letting the tomato sauce and vegetables get nicely cooked, and at the end of the hour put your meat and the cup of heavy whipping cream in. Let this simmer on low for twenty minutes, drain the pasta, and eat well, or Buon Appetito!
